
Zucchini Chips

These zucchini chips are a fantastic snack or summer side dish. Coated with a Parmesan, basil and panko breading, these baked chips crisp up to perfection in a hot oven.
Ingredients
- 1/2 cup panko bread crumbs
- 1/4 cup loosely packed fresh basil leaves
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/4 cup grated Parmesan cheese
- 2 each medium zucchini, sliced into 1/4-in. rounds
- 1 tablespoon olive oil
Directions
- Preheat oven to 450°. Add first 5 ingredients to a food processor; pulse until mixture resembles fine crumbs, 10 to 15 seconds. Add mixture to medium bowl.
- Toss zucchini in oil; coat zucchini 1 piece at a time in breadcrumb mixture, pressing gently to adhere.
- Place zucchini in a single layer on a baking sheet coated with cooking spray. Bake until golden brown and crisp, about 30 minutes, flipping halfway through. Serve immediately.
