This turkey meat loaf recipe isn’t just for dieters! It may be a healthy spin on a comfort food classic, but it’s as flavorful and juicy as the versions made with ground beef.
Ingredients
- 1 cup quick-cooking oats
- 1 medium onion, chopped
- 1/2 cup shredded carrot
- 1/2 cup fat-free milk
- 1/4 cup egg substitute
- 2 tablespoons ketchup
- 1 teaspoon garlic powder
- 1/4 teaspoon pepper
- 2 pounds lean ground turkey
- TOPPING:
- 1/4 cup ketchup
- 1/4 cup quick-cooking oats
Directions
- Preheat oven to 350°. Combine first 8 ingredients. Add turkey; mix lightly but thoroughly.
- Transfer to a 9x5-in. loaf pan coated with cooking spray. Mix topping ingredients; spread over loaf. Bake until a thermometer reads 165°, 60-65 minutes. Let stand 10 minutes before slicing.
