
White Chocolate Cranberry Oatmeal Cookies

White chocolate cranberry oatmeal cookies mix sweet baking chips and chewy dried fruit with old-fashioned oats for a chocolaty, tart twist on oatmeal raisin cookies.
Ingredients
- 2/3 cup butter, softened
- 2/3 cup brown sugar
- 2 large eggs, room temperature
- 1-1/2 cups all-purpose flour
- 1-1/2 cups old-fashioned oats
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1-1/2 cups white baking chips
- 1-1/4 cups dried cranberries
- 1/2 cup chopped pecans, toasted, optional
Directions
- Preheat oven to 375°. In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs. Combine flour, oats, baking soda, cinnamon and salt; gradually add to creamed mixture. Stir in chips, cranberries and, if desired, pecans.
- Drop by tablespoonfuls 3-in. apart onto ungreased baking sheets. Bake until golden brown, 10-12 minutes. Remove from pans to wire racks to cool.
