Ingredients

  • 2 pounds ground beef
  • 2 medium onions, chopped
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 2 cans (15 ounces each) Ranch Style beans (pinto beans in seasoned tomato sauce), undrained
  • 2 cans (14-1/2 ounces each) diced tomatoes, drained
  • 2 large potatoes, peeled and chopped

  • 1 can (15 ounces) mixed vegetables, drained
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink, breaking meat into crumbles. Add garlic; cook 1 minute longer. Drain. Stir in next 11 ingredients.
  2. Bring to a boil. Reduce heat; cover and simmer until potatoes are tender, 10-15 minutes. Serve with sliced jalapeno if desired.
