Chimichurri Chicken

Chimichurri chicken is an Argentinian-style dish bursting with herbs and garlic. Serve it as a fast main course that's out of the ordinary.

Ingredients

  • 1/2 cup olive oil
  • 4 tablespoons minced fresh parsley
  • 3 tablespoons red wine vinegar
  • 6 garlic cloves, minced
  • 1/2 teaspoon dried oregano
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1-1/2 pounds boneless skinless chicken thighs

Directions

  1. In a large bowl, whisk together olive oil, parsley, red wine vinegar, garlic, oregano, salt, pepper and crushed red pepper flakes. Reserve half the chimichurri sauce for serving; refrigerate. Add chicken to large bowl with remaining chimichurri; toss to coat. Cover; refrigerate at least 30 minutes.
  2. Remove chicken, discard marinade. Grill, covered, over medium-high heat, 4-5 minutes per side or until chicken reaches 165°. Serve with reserved sauce.
