Blueberry Waffles

These blueberry waffles are light, crispy and packed with sweet, juicy blueberries—just the thing for a cozy breakfast at home or a weekend brunch.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 large eggs, room temperature, separated
  • 2 cups 2% milk
  • 1/4 cup canola oil
  • 1 cup fresh blueberries
  • Optional: maple syrup and butter

Directions

  1. In a bowl, combine the flour, sugar, baking powder and salt. Combine the egg yolks, milk and oil; stir into dry ingredients just until moistened. In a small bowl, beat egg whites until stiff peaks form; fold into batter. Fold in blueberries. Bake in a preheated waffle maker according to manufacturer's directions.
  2. Serve with maple syrup, butter and if desired, additional fresh blueberries.
